Jamie Oliver's Perfect Roast Turkey Recipe

Roasting a whole turkey is the ultimate holiday cooking flex, but it's also where the most common kitchen disasters happen. The classic mistake? Stuffing the massive bird so full that the heat can't circulate, leaving you with overcooked, dry breast meat and undercooked thighs.

Jamie Oliver's Perfect Roast Turkey Recipe

Jamie Oliver solves this notorious holiday hurdle with a few brilliant but simple techniques. Instead of packing the cavity with heavy stuffing, he fills it with fresh clementines to steam the meat from the inside out. He then pushes a rich, festive herb and cranberry butter straight under the skin to baste the breast meat continuously while the skin turns shatteringly crisp. Finish with a proper 2-hour resting period, and you'll carve the juiciest, most flavorful turkey of your life.

Ingredients (Serves 8 to 10 people)

  • The Turkey & Cavity Aromatics:
    • 1 Whole Turkey (giblets removed, patted dry)
    • 2 to 3 Clementines (halved, for the cavity)
    • Your favorite holiday stuffing (reserved for the neck cavity only)
  • The Festive Herb Butter (For Under the Skin):
    • 1 cup (2 sticks) Unsalted Butter (softened at room temperature)
    • 1 handful Dried Cranberries (finely chopped)
    • Fresh Rosemary, Thyme, and Sage (finely chopped)
    • 1/4 tsp Freshly Grated Nutmeg (or the zest of 1 lemon/clementine)
    • 1 good pinch of Black Pepper (no salt in the butter)

Step-by-Step Instructions

  • Step 1: Mix the festive butter In a mixing bowl, combine the softened butter, chopped dried cranberries, fresh rosemary, thyme, sage, black pepper, and freshly grated nutmeg (or citrus zest). Use a spoon or your hands to mash and scrunch everything together until the herbs are evenly distributed.
  • Step 2: Create skin pockets and butter the bird Starting at the neck end of the turkey, gently slide a spoon or your fingers between the skin and the breast meat to loosen it. Carefully create a large pocket over both breasts without tearing the skin. Push the flavored herb butter deep into these pockets and massage it evenly over the breast meat. Secure the loose skin at the opening with a sprig of rosemary or a small skewer so the butter doesn't leak out immediately.
  • Step 3: Stuff the neck, not the cavity Do not put stuffing in the main body cavity—this blocks heat circulation. Instead, push your halved clementines inside the main cavity to release fragrant steam from the inside out. Pack your actual stuffing tightly into the neck cavity, pulling the neck skin down and tucking it under the bird to secure it.
  • Step 4: Roast low and slow Preheat your oven to the highest screaming hot setting. Place the turkey in the oven and immediately drop the temperature to 350°F (180°C). Roast the turkey (a general guide is about 35 minutes per kilo/2.2 lbs) until the skin is deeply golden and crisp.
  • Step 5: The three-test doneness check To guarantee it's fully cooked:
    1. Pick the bird up with two forks and let the cavity juices run onto a white plate; the juices must run completely clear with zero traces of blood.
    2. Insert a fork into the thickest part of the leg/breast, wait 5 seconds, pull it out, and touch the metal to your lip—it should be piping hot.
    3. Pinch a piece of leg meat; if it pulls away easily from the bone, it's done.
  • Step 6: The crucial resting phase Remove the turkey from the oven. Tent it tightly in tin foil, then cover it with two thick tea towels to trap the heat. Let the turkey rest completely undisturbed for 1.5 to 2 hours. (This redistributes all the boiling juices back into the meat rather than spilling onto your cutting board).
  • Step 7: Chef-style carving Remove the legs at the ball joints. Instead of awkwardly slicing the breast meat directly off the bird, slice straight down alongside the center breastbone to remove the entire turkey breast as one giant piece. Place the boneless breast on your cutting board and slice it cleanly into thick, perfect medallions. Pour hot gravy over the slices and serve!

Kitchen Gadgets & Pro Tips

  • Instant Core Temperature Accuracy: While the lip-test works, using a Digital Instant-Read Meat Thermometer is the most foolproof way to guarantee safety. Inserting the probe into the thickest part of the thigh until it hits 165°F (74°C) ensures your bird is perfectly cooked without drying out the breast.
